Fresh Bluberry Whipped Butter Recipe

Fresh blueberry season is in full-swing here at Pheasant Field Bed and Breakfast; whether you're getting them fresh off the vine or fresh from the store, now is the time to satisfy that blueberry craving! Our Innkeeper Kit recently shared the most delectable-sounding fresh blueberry recipe for "Fresh Blueberry Whipped Butter", which combines butter and a Fresh Blueberry Sauce into a light, fresh whip. Our mouths are watering too!

Both the Blueberry Sauce and the Blueberry Whipped Butter can be used with pancakes, scones, and many other sweet treats- but Kit gave us an insider tip on a special way to use the blueberry sauce: "If you strain the sauce, you can keep it in a squirt bottle. Cut a medium tip opening in the bottle to create pretty swirls or squiggles on the plate before serving". The blueberry sauce will hold for about a week, and the butter will hold for about two- if they're not eaten up before then!

Fresh Blueberry Whipped Butter Recipe:

"This is a SIMPLE recipe for a condiment that you may want to use all summer. Fruited butter and sauces bring breakfast to a new level of summer flavor!"

Blueberry Sauce:

* 2 C Fresh Blueberries
* ¼ C Water
* 3 Tbs Sugar
* 1 Tbs Cornstarch
* ½ Lemon (Zest & Juice)
* ½ Teaspoon Vanilla
1. Rinse and remove any stems from blueberries.
2. In a small saucepan on medium heat, add blueberries, water, sugar, corn starch, lemon and lemon zest. Stir to combine and bring to a simmer. Allow to simmer 5-10 minutes until mixture begins to thicken. Remove from heat and add vanilla. Stir and cool completely.
3. Store in sealed jar and refrigerate.


Blueberry Butter:

* 2 Sticks Unsalted Butter, room temperature
* 2 Tbs Powdered Sugar
* ¼ C Blueberry Sauce
1. In a medium bowl, whip the softened butter and powdered sugar until light and airy.
2. Fold in Blueberry Sauce, until combined.
3. Keep refrigerated.
