Recipe of the month: Apple Enchiladas

Ingredients:

2-3 bricks of cream cheese (I always use the Philedelphia Cream Cheese because it heats up better than others)

1-2 packets of flour tortillas

2-3 cans of apple pie filling

2 sticks of butter

2 cups of confectioners sugar

1 Tbsp of vanilla extract

Directions:

Preheat oven to 350.  Let cream cheese warm up to room temp...easier to stir.  Gradually stir in vanilla extract and confectioners sugar.  Blend until all lumps are gone!

Liberally spread cream cheese mixture on tortilla.  Spoon apple filling across diameter of tortilla.  Roll up like an enchilada.  Place in a buttered baking dish.  Do this with remaining ingredients.  The more the yummier!  When you have made all the tortillas, pour a stick of melted butter over the top of enchiladas and bake at 350 for about 20-25 minutes, or until bubbling and somewhat browned.

After pulling enchiladas from oven, you can also add a glaze sauce by mixing together confectioners sugar, butter, and a little milk until you get the consistency you want. Then pour over warm enchiladas and serve. It's a great breakfast item, but it's also a nice dessert for after dinner, served with some vanilla bean ice cream or pralines and cream ice cream on top!!!  Also, I like to add cinnamon to my apple mixture if there isn't any in there already.

That's it.  Very simple, yet very popular dish!
